Egg sector
The sanitary control of egg products and the monitoring of the hygienic conditions of preparation, processing, packaging and storage of these products shall be ensured in:
– Establishments processing table eggs.
– Egg Packing Centres.
– The points of sale.
In order to be approved or authorised in terms of health, these establishments must comply with the requirements of general and specific laws and regulations, in particular:
– Law n°28-07 on the health safety of food products and the texts adopted for its application;
– Law n°49-99 on the health protection of poultry farms, on the control of the production and marketing of poultry products and the texts adopted for its application.
Each unit approved by the Office National de Sécurité Sanitaire des Produits Alimentaires (ONSSA) must have a system of self-checking and traceability in accordance with the standards in force.
